Summer Berry Pudding

Summer berries add sweetness to this layered pudding, which can be made the night before for an easy grab-n-go breakfast.

Level of Difficulty: Easy

Prep Time: 15 minutes

Cook Time: 00 minutes

Total Time: 15 minutes + 4 hours refrigeration

Makes: 2 servings

 

Ingredients:

Chia Pudding

1 cup milk                                                   

1/2 cup low fat vanilla yogurt

2.5 TB chia seeds                                           

1/2 tsp vanilla extract                        

2 tsp honey                                        

           

Smoothie

1/2 cup low fat vanilla yogurt

1/4 cup fresh orange juice                              

2/3 cup frozen mixed berries 

 

Layers

3/4 cup summer berry compote or your favorite fruit jam    

2 tsp toasted coconut flakes                      

2 squares Lindt EXCELLENCE 70%    

 

Method:

1.      To make the chia pudding, whisk the milk with the yogurt, chia seeds, vanilla and honey until well combined. Cover and refrigerate for 4 hours.

2.      To make the smoothie, blend together the yogurt, orange juice and 3/4 of the frozen berries, until smooth.

3.      Spoon the berry compote or jam into the bottom of 2 glasses. Top with the thickened chia pudding and then the berry smoothie.

4.      Garnish with the remaining frozen berries, coconut flakes and top with a square of Lindt EXCELLENCE 70%.

Tip:  Alternately, use your favorite dairy-free beverage such as coconut milk if desired.
